No-Bake Desserts for Summer (or any time!)
And today's topic is... DESSERT. Desserts you can make with no oven, specifically. Which makes these recipes perfect for summer! When it's hot outside, it's a great time to let the oven turned off.
When I was growing up, we always, always had dessert with our meals. Most times, multiple desserts! Chocolate cake and canned peaches or pears was a staple. Then Mom would often make other desserts along with that, such as this Grape Dessert.
And just to give you a little context, we are a Mennonite family living in the Midwest. We make all sorts of Mennonite and Midwestern-style comfort foods, like Poor Man's Steak and Mashed Potatoes.
So! When I'm wanting a dessert, but don't necessarily want to bake, these are the recipes I reach for!
Strawberry Yogurt Popsicles

Starting off with popsicles! This one is very summery, perfect for enjoying on the porch, watching the sunset. You can use any soft fruit like peaches, berries, etc. Easy and yummy, perfect for children!

- Chill time: 6 hours
- Total time: 6 hours, 10 minutes
Oreo Peanut Butter Pie

Ok, this one is RICH. And so good! Normally, we try to eat fairly clean and healthy around here, but every now and then, I'm going to make an Oreo Peanut Butter Pie. Just because 🙂
- Prep time: 30 minutes
- Total time: 30 minutes
Smooth Grape Dessert

I'm afraid this one is a very Mennonite dessert, indeed! And very niche, too. For it is made with grape pulp, like leftover from mixing up a pitcher of grape juice from home-canned grape juice concentrate. My mom made this now and then, so it's another nostalgic dessert for me!
- Prep time: 5 minutes
- Cook time: 5 minutes
- Chill time: several hours
- Total time: 20 minutes + chill time
Peaches & Cream Jello Dessert

My favorite 🙂 Ok, that's all of them, but anyway. Graham crackers on the bottom, a special cream cheese fluff middle layer, then a peach jello layer on top! You can use fresh or canned peaches, and you can make it in one big pan instead of individuals. So yummy, and pretty!

- Total time: 1.5 hours
Thickened Fruit Salad

Somewhat similar to the grape dessert above, though this one doesn't take any super special ingredients like grape pulp, lol. This thickened fruit salad is a favorite in the Mennonite culture! The fruit juice gets thickened (with cornstarch), then you can add any and all fruits you please!

- Cook time: 10 minutes
- Chill time: 1 hour
- Total time: 1 hour, 20 minutes
Eclair Pudding Dessert

A childhood favorite - eclair pudding! Or eclair cake, as it's sometimes called. It's just layers of graham crackers and vanilla pudding with a lovely chocolate topping. This one is fun for children to help make, too!
- Prep time: 30 minutes
- Total time: 30 minutes
Raspberry Jello Dessert Cups

Fun and pretty, jello cups like these are actually really easy to make! There's quite a bit of chill time involved (between adding layers) so it takes a bit of time. But my, aren't they pretty? You can make them with any flavor/color of jello to go with any theme.
- Total prep time: 45 minutes
- Total chill time: 2 hours
- Total time: about 3 hours
Easy Chocolate Bark

After a meal, a little piece of chocolate is just perfect for finishing off the meal. I was a bit skeptical of this recipe at first, but it is good! Especially with the flaky salt on top... don't skip it 🙂

- Chill time: 10 minutes
- Total time: 25 minutes
The Ultimate Fiber Energy Balls
