No Bake Fiber Balls are packed with delicious healthy ingredients to give you energy, yet still sweet enough to satisfy your sweet tooth.

And there’s no baking involved, so these are super easy to make and come together in a hurry!
Of all the many energy ball recipes out there, this is the one recipe I find myself coming back to and making again and again.
These make a great snack when the afternoon munchies set in. (Especially since I’m trying to be more intentional with healthy snacking versus eating all sorts of junk food!)
They’re a great food option for lunch boxes or after school snacks too.
This recipe makes a big batch – perfect for a large family or even an easy snack for a party!
This morning I tackled some more housecleaning around here.
Needless to say, housecleaning is not my favorite activity in the world, though it is necessary, unfortunately.
Cleaning windows, walls, floors, ceilings and everything in between takes energy!
Yes, you guessed it; I was fueled by energy fiber balls, of course! And my, they were delish!:)

Fiber – it’s good for you
Fiber is good for digestion, helps keep blood sugar and hunger in check, and can help lower cholesterol levels, to name a few benefits.
Chia seeds, flaxseed, coconut, oats, and peanut butter all contain fiber.
Some of them are good sources of protein and healthy fats and fatty acids as well.
And they are all key healthy ingredients in these fiber balls!
These fiber balls are delicious; they make a lovely treat (a healthy one, too!) to go with morning coffee or an afternoon pick-me-up or quick snack anytime.

Eight Simple Ingredients
Oatmeal – quick oats
Flaxseed meal – ground flaxseed or flax meal
Coconut – toasted shredded unsweetened coconut
Peanut butter – we used this natural peanut butter
Honey – raw honey
Mini chocolate candies – we used M&M’s
Vanilla – vanilla extract for flavor

Raw honey
We like to keep raw honey in our pantry. In our community, there are several folks who have bees and sell raw honey, so we can buy it locally, which is great!
Some time ago, we were able to go on a tour at a honey bee farm. It was very interesting to see the bees and taste the different flavors of honey made from different flowers.
Not only is honey a delicious natural sweetener in recipes such as this one, but it can also be used to soothe a sore throat or cough and more.
And did you know that raw honey that has been stored properly has no expiration date? Crazy, I know! If it’s been stored correctly, honey won’t go bad; it may crystalize but it’s still perfectly good to eat! Click here to learn more about all things honey.

Supplies we used to make No Bake Energy Fiber Balls
We linked our favorites or something similar.
- Large bowl – we use these stainless steel mixing bowls alot in our kitchen!
- Measuring cups and spoons
- Spatula
- Wooden spoon – for mixing
- Cookie scoop – for shaping the balls
Using an
How to toast shredded coconut in the oven
Set the oven to 350 degrees.
Evenly spread the desired amount of shredded coconut on a baking sheet pan and slide it into the oven, whether or not the oven has fully preheated.
Allow the coconut to toast for 10 – 15 minutes, flipping and stirring halfway through, until it turns to a lovely golden brown color.

And that’s it! You’re done. We’d recommend allowing the coconut to cool before using it in this recipe.
You can also buy shredded coconut that is already toasted here.
How to make No Bake Energy Fiber Balls
If your coconut flakes aren’t already toasted, you’ll want to do that first by following the steps above.
In a large mixing bowl, add all the ingredients and mix well! You can also use an electric stand mixer for this step.


Once everything is thoroughly mixed, use a cookie scoop and/or your hands and shape into approximately 40 small balls.

And that’s it! Enjoy.
How to store No Bake Energy Fiber Balls
Especially if you used raw honey, you’ll want to store these at room temperature in an airtight container and we’d recommend eating them within 5 – 7 days. (For more info on raw honey, scroll up.)
Otherwise, you can store these in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months. (Fun fact, they’re delicious straight from the freezer!)
Notes
You’ll want to be sure and use quick oats, since old fashioned oats don’t stick together as well when it comes to shaping the balls.
Instead of M&M’s, mini chocolate chips work wonderfully in these fiber balls.
Or if you wish to eliminate any added sugar besides natural sugars, you can totally skip the M&M’s!
Other add-ins include: dried fruit such as raisins or craisins, protein powder… feel free to experiment with different flavors and things as long as it doesn’t mess with the texture to the point where the balls don’t stick together when it comes to shaping.

No Bake Fiber Balls
Delicious as well as somewhat healthy, these fiber balls make a wonderful snack!
Ingredients
- 2 cups shredded unsweetened coconut flakes, toasted
- 3 cups quick oats
- 1 cup ground flaxseed
- 1 (16 oz.) jar peanut butter (approximately 1.5 cups)
- 1 cup honey
- 1 tbsp. vanilla extract
- 3 tbsp. chia seeds
- 1 cup M&Ms
Instructions

- In a large mixing bowl, add all the ingredients and mix well! You can also use an electric stand mixer for this step.
