This easy Chicken Bacon Ranch Skillet Dinner with Broccoli is super easy to make, low carb (no rice, potatoes or pasta!) and it tastes good, too. It's a great way to use up leftover roast chicken!

Creamy Chicken and Broccoli Recipe (with Ranch and Bacon!)
If you're looking for an easy way to use up leftover chicken from a roast, this is it! All it is, is chicken, bacon bits and broccoli tossed in a creamy Ranch sauce.
It only takes about 30 minutes (less than that if everything is already cooked!) to whip together!
Easy one pan meals are my favorite! Especially for lunch. Simple, quick and easy. Some people prefer eating this as a dip with tortilla chips (not me, just to clarify) so there's another idea for you.

Ingredients
- Chicken - leftover chicken (that's already cooked and shredded!) is perfect for this recipe
- Broccoli florets - fresh or frozen. Either way, I like to cook them first!
- Bacon bits - either store-bought bacon bits or I actually prefer to cook my own bacon for bacon bits 🙂
- Cream cheese, sour cream, Ranch dressing - the SAUCE. It's so creamy and rich! You can also use plain Greek yogurt in place of the sour cream.
- Onion powder, garlic powder, salt + pepper - the seasonings
- Shredded cheese - to top it off!
Supplies You'll Need (and what we used)
- Measuring cups and spoons - these may not be the most beautiful, but they are still my favorites!
- A large pan
- A separate saucepan to cook the broccoli - this is the cookware set I have, so I'll be using two of these pans today.
- Cheese grater
- Something to stir with - spatula or spoon

How to make our Easy Chicken Bacon Ranch Skillet Dinner
If starting with raw chicken, chop into pieces and cook (until internal temperature reaches 165°F) in a large pan. Then transfer to a plate.
Place the cream cheese, Ranch and sour cream, onion powder, garlic powder and salt in the same pan, and turn it on low on the stovetop.

If using raw bacon, cook it in the microwave or in the oven, then crumble it into bits.
Steam or cook the broccoli in a separate saucepan until it's no longer crunchy. (If you enjoy crunchy broccoli, skip this step!)

By now, the cream cheese should be nice and melty! Take a whisk or spatula and stir the melted sauce mixture together thoroughly.
Add the chicken, broccoli and bacon bits into the sauce and toss it all together!


Spread the shredded cheese on top. Place a lid on the pan and let the burner turned on low for about 10 minutes until it's all heated through.

Serve and enjoy!

How to Store Leftover Creamy Chicken and Broccoli
If you have leftovers, put them in an airtight container and store in the refrigerator for up to 4 days.
Tips, Tricks and Notes on making Creamy Chicken and Broccoli
You can skip the step of cooking the broccoli and just add the raw broccoli straight into the sauce. We don't care for crunchy broccoli so most times I cook it first!
Make it a casserole! Instead of heating through on the stovetop, dump the creamy chicken broccoli mixture into a pan and bake for 20 minutes or so.
What shall I serve with Chicken Bacon Ranch Skillet Dinner?
Serve it all by itself! Or, you can always add a side of rice, potatoes or pasta if you wish.
The red beets are ready in the garden at the moment, so I added of side of brown butter beets 🙂
