It’s been around for years, and it’s still a fun iconic summertime treat.
Healthy? Probably not so much, though gelatin does have several health benefits, believe it or not.
Gelatin is easy on the stomach, so it can be a good food option to eat when recovering from the stomach bug.
The options are endless when it comes to gelatin recipes and ideas. There’s no end to the fun and delicious recipes for eye-catching desserts you could make with a simple box of Jell-o!
This recipe is simply an elevated Jell-o dessert and it just so happens to be one of my favorite recipes for an easy, and pretty dessert.
So simple and easy, made with only 3 common ingredients!
Family and kid-friendly for sure.

Whipped Topping: Cool whip works wonderfully, though I will say, homemade whipped cream topping is best!
Fresh raspberries: this is optional; we used red raspberries for garnish.
Mint leaves: also optional.

How to make our Easy Individual Raspberry Jello Cups Recipe

Make the first pack of jell-o according to package instructions. (If using bulk gelatin, boil 2 cups of water and add 6 ounces of gelatin, stirring until dissolved. Then add 2 cups of cold water.)

Next carefully pour the Jell-o into 6 cups (or your desired containers or dishes), filling each one about half full. A Pyrex measuring pitcher works great for this step!

Now refrigerate the cups half filled with gelatin for at least 1 hour. (Half a day or overnight is just fine as well!)
After the first layer has chilled one hour or more, it’s time to start on the second jello layer: (the best part!) the fun layer of jello fluff.
In 2 more cups of boiling water, dissolve 6 ounces of gelatin.
Place in the refrigerator to chill for 45 to 60 minutes.

You want the gelatin to be cooled, but not solid, before mixing with the whipped topping. (See notes)
Once the gelatin has cooled for 45 minutes to an hour, beat well with an electric hand mixer. Then add in the container of whipped topping, and beat again, being sure to incorporate all the whipped topping stuck to the sides of the bowl, until no lumps remain, creating a perfect light and fluffy jello mixture.


Pour fluffy jello mixture carefully on top of the solid jell-o already in the cups, dividing the fluff evenly among all 6 cups.

Refrigerate the jello cups a little bit longer, about 15 to 30 minutes.
Fit a piping bag with a swirl piping tip and fill the bag with whipped topping.

Make a swirl of whipped topping on the top of each one and garnish with a raspberry and a mint leaf if you wish!

Enjoy within 3 days.

Pro tip: make the jello dessert cups ahead of time, then wait to garnish with whipped topping and fruit until just before serving.
Notes and Variations on Easy Individual Raspberry Jello Cups
You do not want to use whipped topping from a can such as Reddi-whip for the top layer (the whipped topping swirl), unless you are planning to eat the Jell-o cups immediately after adding the whipped topping and garnish. Over time, the Reddi-whip dissolves into nothing, leaving a very sad looking garnish on top of the jell-o cup.
You can also make this in one large dish instead of individual cups. Keep in mind, it may take longer for the gelatin to set up and turn solid.
If you mix up the jell-o fluff layer (second layer) when the gelatin is still warm, the second layer mixture can almost melt the first layer a little, creating the illusion of a third layer! So if you wish to hurry the process up a little, no problem, it’ll just look a little different.
This recipe makes 6 large individual servings of Raspberry Jello Dessert, so for smaller children, it may be a good idea to make this in smaller containers. Plastic cups work well too.
Obviously, this recipe is completely customizable! Use any fruit flavor and color of Jell-o, (even sugar-free jello if you prefer!) to go with your party theme, then garnish with the corresponding fresh fruit: like strawberry jello with fresh strawberries on top, or orange jello with orange slices on top.
Sprinkles or sanding sugar could also be a fun garnish idea, though fruit is our favorite.
Another fun idea is to refrigerate the first gelatin layer on a 45 degree angle. For more inspiration, check this out.

- 1 (6 oz.) box black raspberry gelatin
- 2 cups boiling water
- 1 (8oz.) container whipped topping
Whipped topping swirl
- 6 oz. whipped topping
Garnish
- Fresh raspberries
- Mint leaves
Instructions
The first layer:
