small town scratch

It's green bean season! It's super simple to blanch and freeze your green bean harvest so you can eat them all year long! Here's the simple method we use to preserve green beans:

"Snap" the beans.

01

After the green beans are picked, trim the ends and cut them into shorter lengths, if you wish!

Rinse the beans.

02

I like to rinse the green beans under running water to wash away any dirt that might be on them!

Cook about one pound of green beans in a gallon of boiling water for 3 minutes. (This is called blanching!)

03  Blanch the beans.

Transfer the blanched beans to an ice water bath to stop the cooking immediately, locking in that bright green color!

04  Ice bath the beans.

Drain off the ice water from the green beans and package the beans in freezer bags or boxes.

05  Drain & package the beans.

And that's it!

Label the bags of green beans if you wish and stick them in the freezer for the coming months!
