Prep the ingredients.

Or rather, dice the pepper and onion. There's minimal prep involved in this one pot dinner, so that's a win!

Sauté and cook.

I like to sauté the diced peppers and onions a little, then add the ground beef and cook until it's starting to brown!

Stir + simmer.

Add the rest of the ingredients, give it a good stir, place a lid on top and let it simmer for 20-30 minutes.

Add a layer of cheese.

Once the rice is soft, add some shredded cheese and let it melt a little, then you're ready to serve!

Time to eat!
