Comforting Breakfast Ideas for Cozy Mornings
Searching for comfort food breakfast recipes? Like something that is easy to make (maybe even ahead of time) to make mornings easier? I love a good breakfast, but I will say, I don't always have the time, and I don't always feel like making a mess in the kitchen bright and early in the morning. (That's when it's handy to have homemade granola in the cupboard to pair with homemade yogurt!)
And then there are days when I feel like making a little something fun and extra for breakfast! That's when I make Gold Rush breakfast casserole and cinnamon rolls. 🙂
I also like my meals to be mostly healthy, so these breakfast recipes are mostly made with whole foods and clean ingredients.
Good old scrambled eggs (made with homemade Velveeta cheese) and homemade whole wheat toast is still my go-to breakfast. It's really easy to make and doesn't make a big mess. But it's fun to have variety, too!

What is comfort food?
According to the Merriam Webster Dictionary, comfort food is food prepared in a traditional style, usually having nostalgic or sentimental appeal.
So, everyone's idea of comfort food is likely different. To give you a little context for this list of comfort food breakfast ideas, we are Mennonites from the Midwest. So when I think of comfort food, I'm thinking foods like potatoes, lots of melty cheese, not a whole lot of spice... etc.
Gold Rush Breakfast Casserole

Starting off with arguably the best one on the whole list - Gold Rush Breakfast Casserole! It has layers of shredded potatoes, scrambled eggs, meat (bacon or sausage), cheese, and a homemade white sauce. The white sauce is what makes the casserole so good! This is a family favorite, for sure.
- Prep time: 45 minutes (IF you cook the potatoes, shred the cheese, and cook the meat. If using pre-cooked ingredients, it'll go a lot faster!)
- Bake time: 45 minutes
- Total time: 1.5 hours
Easy Healthy Baked Oatmeal

I love this baked oatmeal recipe because it's so easy, and there's no actual sugar added! It's sweetened with maple syrup. Also, the cinnamon in there is so good 🙂
- Prep time: 10 minutes
- Bake time: 20 minutes
- Total time: 30 minutes
Bacon Egg Bites

MMM, these egg bites are great for prepping ahead of time! I like to make a batch (or a double batch) of these and keep them in the fridge to reheat throughout the week. You can customize them to your liking, and they're high in protein. You may want to use silicone muffin liners or either grease your muffin pan really well since they like to stick fast!

Breakfast Haystacks

Quite possibly my favorite: breakfast haystacks! The essentials for these are toast cubes or shredded hashbrown potatoes, scrambled eggs, bacon or sausage, and homemade cheese sauce. Beyond that, you can add any of your favorite breakfast things like salsa, avocado, sauteed peppers and onions, etc. Everyone can customize their own haystack!

Maple Cinnamon Granola

One really, really easy breakfast idea is homemade yogurt and granola. I like to make my own homemade granola, and this maple cinnamon granola recipe is very easy and basic and tastes great!

Peanut Butter Oatmeal Granola

And along the same lines, we have peanut butter oatmeal granola! If you're someone who likes peanut butter, this one's for you 🙂

Pancake Breakfast Tacos

Did you ever have a breakfast taco? Use thin pancakes for the taco shells, and fill them with scrambled eggs, sausage, and fried hashbrown potatoes. Add a drizzle of maple syrup, if you wish! It works great to make these on a Blackstone griddle (so much surface area to fry everything!) though you can also make everything on the stovetop inside.

Cinnamon Rolls with Vanilla Glaze

And now for a sweet breakfast idea, just for fun! Cinnamon rolls with a lovely vanilla glaze made from scratch. These are the best! And definitely not the healthiest, but hey. Every now and then, it's fun to have a little treat with breakfast.

- Second rise time: 20 minutes

Oven Baked Omelet

And lastly, my Sunday morning favorite - Oven Baked Omelet! Put everything in a pan (bread cubes, eggs, meat, cheese and seasonings) and bake. That's it! Super simple, especially if you have the meat already cooked ahead of time. Or you can skip it entirely, too.
