Our recipe for Simple breakfast haystacks are a delightful and hearty breakfast with toast squares on the bottom, bacon bits and scrambled eggs on top then finished with a drizzle of homemade cheese sauce. MMM…🤤

There’s a few steps involved, but it’s worth it!
I’m always on the lookout for different breakfast ideas.
It’s easy to get burned out on the same old breakfast foods for some folks, namely, my husband.
And, he leaves for work early so it’s nice to have quick meals for breakfast; this one is quick if we prep the ingredients ahead of time. (With the exception of the scrambled eggs!)
Baked Breakfast casseroles such as Gold Rush Breakfast Casserole and Baked Omelet are always delicious, but honestly this is one of my favorite breakfast foods of all time!

Ingredients
Toast. Kicking things off we have toasted bread cut into small cubes creating the base layer of the breakfast haystack. Bought bread, homemade bread, take your pick.
Butter. We like to throw several small pats of butter into the pan before adding the eggs.
Eggs. Simple scrambled eggs make up the next layer.
Salt & pepper. Naturally, you’ll want to add salt (and possibly pepper!) to the eggs…
Bacon. Next up is cooked bacon chopped into bite size pieces.
Cheese Sauce. And last (but definitely not least!) comes the cheese sauce. Finish off your amazing breakfast haystack with a lovely drizzle of cheese sauce!

Supplies we used
- Small saucepan – with which to make the cheese sauce.
- Whisk – essential for stirring the cheese sauce mixture!
- Kitchen scissors – this is a very handy kitchen tool to have around – perfect for cutting the toasts into cubes and bacon into little bite-sized pieces.
- Bacon tray – this nifty little microwave bacon tray with a lid makes frying bacon (without making a splatter-y mess!) super easy!
- Paper towel – to soak up the excess grease from the bacon once it’s fried.
- Immersion blender – this thing works amazingly to blend the eggs!
- Large skillet – we use ours like this every day; it’s ideal for scrambling eggs for breakfast haystacks.
- Nylon spatula turner thingy – this works great with non-stick cookware since it won’t scratch the surface.

How to make Simple Breakfast Haystacks
Cheese sauce: This may seem counter-intuitive, but first of all let’s get the cheese sauce going so it’s ready by the time we’re ready for it. In a saucepan on medium heat, melt the butter.
Once the butter is melted, add the flour and whisk until smooth and bubbly.
Slowly add the milk and stir well. Keep stirring until the mixture has thickened somewhat.
Then remove from the burner or turn off the heat and add the cheese and salt and pepper. Stir occasionally until the cheese has melted completely in a lovely cheese sauce.

Toast squares: Toast the three slices of bread in a toaster or pan. Take a kitchen scissors or bread knife and cut the toasts into little squares.

Bacon: Arrange the bacon slices on a bacon tray and microwave 3-5 minutes or until cooked to your liking. (Cook times may vary depending on your microwave.) After it’s cooked, transfer to a piece of paper towel to soak up any excess grease. Then chop the bacon into bite-sized bits.

Eggs: Scrambled eggs are best right after they’re made, so we make them last. Heat a skillet on the stove on medium heat and put in the butter. Use an immersion blender to blend the eggs then pour them into the pan with the butter. Use a spatula to scramble the egg mixture. Take a salt shaker and sprinkle in your preferred amount of salt.

Now for the fun part – assembling the haystacks! Divide the toast squares between two plates. Next divide the scrambled eggs and place on top of the toast, followed by the bacon bits. Add a drizzle of cheese sauce, the finishing touch.

This recipe is our favorite way to make simple breakfast haystacks, but obviously there are many more great options when it comes to toppings you could add.
Fried shredded potatoes or hash browns make a great substitute for the toast cubes or you can do both!
More great additions are cooked ground sausage, diced cooked ham, diced sautéed peppers, mushrooms, onions, salsa, and sour cream, etc.
Things such as green onions or fresh parsley make splendid garnishes.
If you don’t have the time to make cheese sauce, you can substitute with shredded cheese (although cheese sauce is best!). Another fun swap is using sausage gravy instead of cheese sauce!
A great way to serve this meal for large gatherings or groups is to set it up buffet style, with all the different items and options. This way everyone can build their own breakfast haystack!

Breakfast Haystacks
Delicious simple breakfast haystacks for two!
Ingredients
