A great thing about this simple egg casserole is it can be prepared the night before and baked the next morning for an easy breakfast solution on busy mornings!
You’ve probably heard of southwestern omelet casserole, western omelette, baked Denver omelet casserole, or something similar, but we prefer to keep this omelet recipe very simple, wholesome, and downright delicious.
Fun fact, I was somewhat of a picky eater when I was younger. Bell peppers, green peppers, or even green onions were firmly on the “Inedible” list in my mind. (Thankfully I’ve since learned to enjoy such things!) But I can attest, this great recipe is kid-friendly, containing no “gross stuff” so the whole family can all enjoy eating the same thing for breakfast.
Breakfast casseroles are great options when it comes to hosting overnight guests or serving a large group as well.

10 Simple Ingredients for Easy Oven Baked Omelet Breakfast Casserole Recipe
Bread slices: we use bought white or wheat bread
Shredded cheese: cheddar is our fave, though others such as colby jack or sharp cheddar cheese work wonderfully.
Cooked and chopped bacon: check out the section below if you’ve got raw bacon to cook!
Large eggs: farm fresh brown eggs
Milk: whole milk
Salt: regular iodized table salt
Pepper: ground black pepper
Dried parsley flakes
Dried basil flakes
Onion powder

Supplies You May Need
- Glass 9 x 13 baking pan or casserole baking dish
- Measuring cups and spoons
- Immersion blender
- Kitchen knife
- Kitchen scissors
- Grater
- Pyrex glass measuring pitcher or mixing bowl
How to make Easy Oven Baked Omelet Breakfast Casserole
Preheat the oven to 350 degrees, and grease the baking dish you plan to use with cooking spray or butter.
Chop the bread slices into cubes with a kitchen scissors, then layer in the bottom of a greased 9 x 13 baking pan or casserole dish.

On top of the bread, layer the fried, chopped bacon and shredded cheddar cheese.

Dump the eggs, milk, salt, pepper, basil, parsley, and onion powder into a glass Pyrex measuring pitcher or large bowl and use an immersion blender or handheld electric mixer to blend everything together into a smooth egg mixture.

Pour the egg mixture slowly and evenly on top of all the ingredients already in the pan.

Bake the casserole uncovered at 350 degrees for 25 to 30 minutes or until it’s starting to turn golden brown on top, puffed up slightly and the egg mixture is set.

Serve immediately. Enjoy!

Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. Leftover casserole makes for a quick and wonderful breakfast the next day!

Don’t panic; this casserole will puff up in the oven then fall back down slightly as it cools.

What’s the best way to cook raw bacon?
Our all time favorite easy way to fry bacon is in the oven:
- Line a baking sheet pan with aluminum foil.
- Arrange the bacon in a single layer on the lined pan.
- Stick in the cold oven on the top rack and and set the oven to 375 degrees.
- Bake for 15 – 25 minutes, depending on how thick your bacon is, and how crispy you want it.
- Remove from the oven and transfer bacon to a strip of paper towels to soak up the excess grease.

You can also use a microwave bacon tray for a more speedy process.
Frying bacon in a pan on the stovetop is another way, though it’s also more of a mess, in our opinion.

Baked Omelet Breakfast Casserole
Simple and delicious, baked omelet breakfast casserole contains all the common and traditional breakfast ingredients, resulting in a hearty breakfast for the whole family to enjoy.
Ingredients
- 5 bread slices
