Quick + Easy Breakfast Idea – Bacon Cheddar Egg Bites
Breakfast can be a challenge. I want something high protein for breakfast, preferably. It’s super easy to quickly scramble some eggs, but it’s also easy to get burned out on them, in our experience.
A couple of our favorite recipes to change things up to get out of that breakfast rut are Gold Rush Breakfast Casserole, Baked Omelet, or Breakfast Haystacks. And egg bites, of course.
I have to at least acknowledge, this is a loose Starbucks copycat recipe; who doesn’t love the egg bites from Starbucks? Anyway, that’s what inspired me to come up with my own breakfast egg muffin recipe.
You’ll Love These Easy Bacon Egg Bites
Make-ahead breakfast. So, with a little bit of meal prep, you can have a quick and tasty breakfast for several mornings – that’s not a fried or scrambled egg – in a few minutes, without getting up an hour early! Here’s how: make these homemade egg bites ahead of time, store them in the fridge or freezer, then they’re right there, ready to grab in the morning!
No fancy equipment required. It’s nice to have an electric blender or mixer, but a good old-fashioned whisk works just fine for mixing up this easy egg bites recipe.
Budget-friendly. Make a few breakfasts all at once, without breaking the bank.
Customizable. You can add (or omit) any of the add-in ingredients – meat, cheese, vegetable – to make the perfect breakfast egg bites for your family.
Healthy breakfast idea. Cottage cheese adds a little extra protein to these egg bites and the best part is since they’re made from scratch, you don’t have to worry what’s in them.

Simple Ingredients (+ Substitutions!):
- Eggs – large eggs (I prefer the brown ones with bright orange yolks, but any will do!)
- Bacon – cooked bacon or bought bacon bits from the store. You can use cooked sausage or diced ham instead, if you wish!
- Cottage cheese – the “secret ingredient” (or maybe not so secret) is regular small curd cottage cheese. A simple substitute for cottage cheese is 1/4 cup cream or milk.
- Salt & pepper
- Onion powder & garlic powder. If you don’t mind texture, you can use real diced onion and pepper instead!
- Cheese – shredded cheddar cheese. You can use any shredded cheese in place of cheddar, if you’d like.

Supplies we used
- Muffin tin – the standard regular sized muffin tin
- Non- stick cooking spray – I like to use olive oil cooking spray, though you can also use regular olive oil or butter to grease the pan.
- Mixing bowl
- Microwave bacon tray – using a tray like this one is a quick and easy way to cook bacon! And it doesn’t make a huge mess.
- Measuring cups and spoons
- A spatula or two
- Electric hand mixer – or immersion blender or whisk to beat the eggs. I’d recommend using an immersion blender (or any blender) if you don’t want to see the cottage cheese at all in the finished egg bites!
How to make our Easy Recipe for Bacon Egg Bites
Preheat the oven to 350° F.
Cook the bacon slices (I like to put the bacon slices on a microwave bacon tray, then microwave them for about 4 minutes) then chop them into bacon bits.
Crack the eggs into a mixing bowl, then use an electric hand mixer on high speed to mix them thoroughly. Add the rest of the ingredients and mix again, on low speed. (If you want, you can keep the cheese out and sprinkle it on the top just before baking.)
Thoroughly grease a standard muffin tin with non-stick cooking spray (or butter) and put about ¼ cup of the egg mixture into each greased muffin cup.
Bake for 20 minutes or until the egg mixture is set and the tops are starting to turn golden brown. (They will puff up while baking, then settle a little while cooling!) After baking, let them rest for a few minutes before using a fork to gently transfer them to a serving plate or wire rack.

Storing + Re-heating Bacon Egg Bites
Storage: after the egg bites have cooled, place them in an airtight container and store them in the refrigerator for 3-4 days or in the freezer for a couple months.
Reheating: place several egg bites on a plate and pop them into the microwave for a minute or so until they’re nice and hot. Or if you have more time, you can re-heat them in the oven! I’m assuming it’d work ok to reheat them in an air fryer, but we don’t have one so I can’t say for sure.
Try these add-ins!
We’ve given you the recipe for the basic version of tasty egg bites, but you can totally make your own favorite version by adding any of your favorite omelet ingredients! Here’s a few ideas:
- Mushrooms – diced mushrooms
- Peppers – a diced sweet bell pepper
- Onion – skip the onion powder and add a real diced onion
- Spinach – fresh (or frozen) spinach would be a delicious addition
- Cheese – different cheeses, in addition to or instead of the cheddar, such as mozzarella or swiss cheese.
- Meat – instead of bacon, you can always add cooked breakfast sausage or diced ham.
If you do decide to add veggies, I’d cook or sauté them before adding into the egg mixture. This helps keep your egg bites from getting watery and there won’t be anyone biting into a crunchy vegetable.
Tips, Tricks + Notes
Don’t love the texture of cottage cheese? Use a blender to blend the egg and cottage cheese mixture to make sure there are no little white lumps in the egg bites! If you do this, it’s a good idea to add the bacon and shredded cheese after the blending.
Create a steamy baking environment by placing a pan of water on the lower rack, below the egg bites pan while it’s baking on the top or middle rack. The steam helps to keep the outside of the egg bites from drying out until the middle is done.
Don’t skimp on the grease! Especially if you’re using a traditional muffin pan (not a silicone muffin pan). I like to use plenty of olive oil spray to coat those muffin cups so I can easily get the egg bites out!
Make mini egg bites simply by using mini muffin pans instead of a standard muffin pan. Instead of 12 egg bites, it should make about 24!
