The Easiest Crockpot lasagna is very easy to prepare, a delicious and savory lasagna slow cooked to perfection in a crockpot. This recipe is perfect for days when I want to go away for half the day and still have a homemade meal for dinner!

If you’ve never had a delicious meal of homemade lasagna, I’d say you’re missing out. (It’s amazing!) This crockpot version of lasagna is a very easy way to make a tasty, yet easy weeknight dinner or for busy nights in general.
Is it less work to make lasagna in a crockpot versus in the oven? I’d say it’s probably about as much work, though the beauty of an easy crockpot meal like this one is you can make it, then leave the house for a couple hours and return to a lovely dinner for the whole family.
I’ve been on a crock-pot cooking kick lately.

Crockpots are really very handy things to have; perfect for when I plan to be gone for half the day, or some recipes can even be slow cooked all day.
Another pro of using a crockpot, they don’t heat up the kitchen like using the stove or oven would. (Which is especially great in the summer time!)

Seven Simple Ingredients
Ground beef – your choice of ground beef. We generally keep a stash of beef in the freezer which comes in very handy for easy meals.
Onion – a large white onion, diced finely.
Tomato pasta sauce – your favorite flavor of tomato sauce; we recommend choosing one with great flavor, since this recipe doesn’t contain extra spices! We use our home canned pizza sauce, though marinara sauce, spaghetti sauce or pretty much any red sauce works great.
Lasagna pasta – regular lasagna noodles, the uncooked ones. The pasta will soften and cook on it’s own throughout the slow cooking process.
Cottage cheese – full fat small curd cottage cheese. (You can also substitute with ricotta cheese if you’d like!)
Mozzarella cheese – a block of regular mozzarella cheese.
Parmesan cheese – freshly grated Parmesan cheese or from a can, we’ve done both. Of course fresh is best, but honestly today we’re using the canned stuff.

Supplies
- Slow cooker – a crock-pot is essential for this recipe, obviously.
- Frying pan or skillet – you’ll need some sort of frying pan to cook the ground beef.
- Spatula – if you’re like me it’s always handy to have a spatula when making pretty much anything in the kitchen.
- Grater – hand shredded cheese is more delicious than the pre-shredded stuff; though no judgment whatsoever if you decide to use pre-shredded cheese.
How to make The Easiest Crockpot Lasagna
First things first, cook and brown the ground beef along with the diced onion on medium heat. After it’s cooked, drain off the excess grease and mix with the pasta sauce.
Grease the crockpot liner well with non-stick cooking spray or butter. (Especially towards the top of the liner since that’s where it tends to want to stick!)
Spread a third of the ground beef pasta sauce mixture in the bottom of the crockpot.

Follow with a layer of uncooked noodles. You may need to break the pasta a little to fit them to the oval shape of the crockpot.

On top of the noodles, goes the best part: the cheese layer. Add a third of the cottage cheese along with a third of the shredded mozzarella cheese and a dusting (or however much you prefer!) of parmesan cheese.

Repeat steps 3, 4, and 5 again two more times using up all the ingredients.

Place the lid on the crockpot and allow the lasagna to slow cook on Low for 4 hours.
Serve (in the crockpot works best!) and enjoy!

Notes
An 8 ounce block of mozzarella cheese equals about 3 cups of shredded mozzarella cheese.
Four hours of low slow cooking time is about right for this recipe, though a little bit shorter or longer is ok too! It depends how soft you prefer to have your pasta in lasagna.
We cheated and used the canned Parmesan cheese today even though we recommend and always like to use freshly grated cheese from a block if we can.

What shall I serve with Crockpot Lasagna?
Bread. Breadsticks or garlic bread go well with delicious lasagna.
Salad. A fresh garden side salad or Caesar salad pairs well with lasagna.
As for desserts, we recommend our family favorite Eclair Dessert.
Storage
Store the leftover lasagna in an airtight container in the refrigerator for 3-4 days.

Easy Crockpot Lasagna
Classic, comforting lasagna made in a slow cooker instead of the oven!
Ingredients

- 9 uncooked lasagna pasta noodles
- 1 (24 oz.) container cottage cheese
- 1 (8 oz.) block mozzarella cheese, grated (see notes)
