Hearty Hamburger Soup: Ground Beef & Tender Veggies in a Rich Broth
Hey friends, it’s soup season!
And today, I’m here with another Mennonite-style comfort food…Hearty Hamburger Soup!
This is another old family favorite, similar to Cheeseburger Soup, but this time we also have that lovely tomato flavor in there.
Nothing beats a steaming bowl of hearty hamburger soup on a cold day, and it’s great for when you are exhausted and need an easy meal on busy days!
Also, cooking weeknight dinners from scratch doesn’t mean you need to spend hours in the kitchen or buy a grocery list of expensive ingredients. Some recipes demand specialty items and complex steps that can leave me frustrated. Hearty Hamburger soup solves both problems by using simple and common ingredients, and just one large pot!
Plus another great thing, this recipe makes a big batch, enough to serve leftovers for lunch the next day! And if leftovers isn’t something you’re interested in, or you don’t have a large family, you can always divide the recipe in half.

Supplies we Used:
- Peeler – I always reach for my OXO peeler for peeling anything. It’s my favorite!
- Cutting board + Kitchen Knife
- Vegetable Chopper – I like to use my vegetable chopper (similar to this one) to make neat little veggie blocks for soup.
- Soup pot – I’ll be using my trusty Made-in 6 qt. pot again today.
- Meat Chopper – this is optional, but I find it really helpful to chop the ground beef while cooking!
- Measuring cups and spoons

Ingredients
- Ground beef – we usually go for the ground beef with higher fat content (like 70/30) but lean ground beef is just fine too!
- Root vegetables – carrots, potatoes and an onion
- Seasonings – salt, seasoned salt, parsley, and black pepper. I still have parsley growing in my garden, to I used fresh parsley this time!
- Tomato juice – I use my home-canned tomato juice, but it’s available at the grocery store, too. Or, you can mix tomato sauce or tomato paste with a little bit of water to make tomato juice!
- Milk – whisked with flour to thicken the soup just a little

How to make our Hearty Hamburger Soup Recipe
Dice the onion. In a large soup pot, cook the onion and ground beef together. Meanwhile, wash, peel and dice the potatoes and carrots.
Once the ground beef is cooked (drain off the excess fat if you wish) then add the potatoes, carrots, tomato juice, salt, seasoned salt, parsley and pepper. Simmer on low until the vegetables are tender, about 15 minutes. (Simmering time may vary a little! Let it cook until you can easily stab the vegetables with a fork.)
Whisk the flour with about one cup of milk, then add it to the pot of soup, along with the rest of the milk. Stir and heat on medium-low heat, but don’t bring it to a boil again.

How to Store Leftover Hearty Hamburger Soup
Store any leftover soup in an airtight container in the refrigerator for 3-4 days.
How to Reheat Hearty Hamburger Soup
- Microwave: put the soup in a microwave safe dish and microwave for a minute or two at a time, stirring frequently until the soup is hot. (The fastest way to heat soup!)
- Slow Cooker: put the soup in a crock pot and heat on low for 2-3 hours or until it’s nice and hot. (This works great for Sunday dinner.)
- Stovetop: put the soup in a saucepan and heat on medium heat, stirring occasionally until the soup is hot. (My favorite way:)
Tips, Tricks + Notes
- Customize it! Soups like this one are forgiving, so you can use other ingredients you think would be tasty. For example, diced celery, green beans or other vegetables, or herbs like basil or oregano would be great additions.
- Add some heat with a pinch of cayenne or red pepper.
- Taste test. As always, you should taste the soup before serving, and add more seasonings as you desire!:)
