I’ve been on a slow cooking kick lately and crock-pot recipes like this one are perfect! Set the crock-pot in the garage (or even outside?) if you’re really serious about keeping the heat out of the kitchen.
In the winter time, it gets cold here in the Midwest.
Sometimes I like to make a holiday dinner just for the two of us and this chicken and stuffing dinner is an easy, no stress alternative to the traditional full course holiday meal you’ll likely have with family for Thanksgiving dinner.

Six Simple Ingredients
Chicken – boneless skinless chicken breasts.
Cream of chicken soup – a can of condensed cream of chicken soup or you can totally make your own. (And it’s sure to taste better!)
Milk – whole milk is our preference.
Stove Top stuffing mix – yes, we’re cheating and using the dry stuffing mix from a box. It’s so easy and the extra flavors from the dry mix are actually amazingly delicious.
Water – good old water or chicken broth to moisten the stuffing mix.
Butter – salted butter to place on top of everything.

Supplies
- Crock-pot – these things are so handy once you get in the habit of using them! We use our 6 quart crockpot for this particular recipe.
- Mixing bowl – you’ll need something to mix together the soup mixture and then also to prepare the Stove-top stuffing.
- Whisk – we use our silicone whisk and spatulas a ton in our kitchen; wouldn’t want to do without them!
Measuring cups and spoons - Meat thermometer – I like to use a thermometer when cooking meat just to make sure the meat is fully cooked to my liking.
How to make our Crockpot Chicken Stuffing Dinner
First of all, grease the liner of your crock-pot with non-stick cooking spray or butter.
Next, cut the two chicken breasts in half lengthwise (butterfly style) creating four thin pieces of chicken.
Arrange the chicken cutlets in a single layer in the bottom of the slow cooker.
In a small mixing bowl, whisk together the cream of chicken soup and milk and spread on top of the chicken in the crock-pot.

In the same mixing bowl you used in step 4, mix the Stove Top stuffing mix with the water (or chicken broth) just until it’s completely moistened, then spread the stuffing mixture on top of everything in the crock-pot.
Slice the butter thinly and place butter slices on top of the stuffing mix.

Place the lid on the crock-pot and cook on low for approximately 7 hours. (A little shorter or longer is ok as long as the chicken reaches an internal temperature of 165 degrees.)
Serve and enjoy!

Notes
Crock-pots may vary; some seem to heat hotter and faster than others. Adjust the cooking time of this chicken stuffing recipe according to your specific slow cooker.
If you’re out of condensed cream of chicken soup, no worries. Cream of mushroom soup or cream of celery soup will make a fine substitute (though it will change the flavor!) or you can even make your own cream soup.
If you’d rather have brown chicken meat instead of white meat, use four boneless skinless chicken thighs instead of two chicken breasts.
Storage
Store any leftovers in an airtight container in the refrigerator for 3-4 days, or in the freezer for 3-6 months.

What shall I serve with my Crockpot Chicken Stuffing Dinner?
Make it a complete meal with a side of veggies. For example, we’re having a side of green beans with ours tonight. A side salad would be another simple side dish option. If you’re really feeling energetic, mashed potatoes and gravy would be amazing along with a vegetable.
Cranberry sauce would pair well with this recipe if you’re into cranberry sauce. (I’m not, so I think I’ll pass on making a cranberry sauce to serve with it!)
