Slow Cooker Cheesy Corn is just that – a creamy, cheesy corn side dish made in the crockpot!

Mix it up, set it and forget it for a couple of hours and it’ll take care of itself.
That’s the great thing about this crock pot cheesy corn recipe: it’s made in the slow cooker!
And that’s also what makes it so versatile.
In the summer, keep from heating up the house; instead of using the oven, make cheesy corn in a crockpot and pair it with grilled chicken, burgers, sloppy joes, or steak.
Or for a holiday meal, you can make it ahead of time and it’ll take care of itself while you prep the rest of the meal or simply enjoy hanging out with family!

In our garden…
We’ve got 6 rows of sweet corn growing.
Two rows are an early variety and four will produce a little later if the coons don’t destroy everything, that is.
Once the corn is ripe, we eat alot of fresh corn on the cob at mealtimes, and then we’ll have a “corn day” which is simply a day of harvesting and preserving all the remaining corn.
If you’ve never had home preserved corn, I think you’re missing out! It really is so much better than bought corn.
Plus, it’s so nice and handy to be able to go to the freezer and pull out a package of corn to make the perfect side dish for dinner.

Six Simple Ingredients
Corn – frozen corn or canned corn. We use the sweet corn we harvested and preserved from our own garden, I’d say it’s similar to creamed corn from the store.
Cream cheese – regular full fat cream cheese.
Butter – salted butter.
Cheese – slices of American cheese (the ordinary yellow American cheese).
Milk – regular whole milk.
Salt – of course! Use your favorite kind of salt, we’ve got plain old iodized table salt on hand at this current moment.

Supplies we used
- Crock-pot – these things are so handy (once you get in the habit of using them!) and can be used to make a wide variety of dishes.
- Mixing bowl – our stainless steel mixing bowls are used frequently in our kitchen.
- Cooking spray – we like to use nonstick cooking spray to keep clean-up as easy as possible!
Measuring cups and spoons – every good kitchen should have a set of these.
How to make Slow Cooker Cheesy Corn
Drain the corn if necessary and place in a mixing bowl.
Add the rest of the ingredients into the mixing bowl with the corn and give it a good stir.
Lightly grease the inside of the crockpot liner with cooking spray, then transfer the corn mixture into the crock-pot.

Set the crock-pot on low for 3-4 hours. (Keep in mind, cooking time may vary slightly depending on your slow cooker.)
Stir halfway through cooking then again before serving.

Microwave method
Even though this is a crock-pot specific recipe, you can totally heat it in the microwave!
Simply mix everything together like usual, place in a microwave safe dish and heat and stir occasionally until the cheeses have all melted and the cheesy corn is heated through.
Notes
Canned corn or frozen corn works for this recipe. If using canned corn, drain off the excess juice.
Fun tip: this recipe can also be served with tortilla chips as a cheesy corn dip!
How do I store Slow Cooker Cheesy Corn?
Store the leftover cheesy corn in an airtight container in the refrigerator for 3-5 days.
We don’t recommend freezing cheesy corn.

Customize you Slow Cooker Cheesy Corn Recipe
Ah, one of my favorite things about cooking: customization.
The more we cook, the more we realize that a recipe is simply a suggestion.
Here’s a few ways you could customize this recipe (though it is perfectly delicious just as it is!):
- Add onion or garlic powder, green chiles, diced peppers, etc.
- Sliced green onions would make a fine garnish
- Velveeta cheese or even shredded cheddar cheese could be added instead of or in addition to the sliced American cheese
- Make this recipe even more creamy – add heavy cream instead of milk.
- A little bit of ground black pepper adds a little kick.

Cheesy Corn in the Crock-pot
Cheesy, creamy corn side dish recipe made in the crockpot!
Ingredients
- 4 cups (two 15 oz. cans) corn, drained (see Notes)
- 1 (8 oz.) package cream cheese cut into blocks
- 4 slices yellow American cheese
- 2 tbsp. butter
- 3 tbsp. milk
- 1 tsp. salt
Instructions
- Drain the corn if necessary and place in a mixing bowl.
- Add the rest of the ingredients into the mixing bowl with the corn and stir well.
- Lightly grease the inside of the crock-pot with cooking spray, then transfer the corn mixture into the crock-pot.
- Set the crock-pot on low for about four hours.
- Stir halfway through cooking then again before serving.
