Chewy, Gooey, Chocolate Marshmallow Squares Recipe
Here’s a couple reasons to love these S’mores bars…
First things first, who doesn’t love a good old s’more? (Except for the fact that they’re messy to eat!) We, or certainly I, enjoy making and eating gooey s’mores.
Alas, it is winter in the Midwest currently and no one is making s’mores outdoors these days. So naturally, now’s the perfect time to make S’mores bars! Of course, these are great, any time of year. A s’more without the mess? Yes, please!
These S’mores bars are a great option for potlucks and parties, too. Not only do they taste amazing, they look it, too! In our experience, pretty food is usually a big hit.
Another thing, I love how simple and quick it is to make this easy recipe with ingredients I already have on hand (or are readily available at the local grocery store). Need a last minute dessert for the holiday season or fun treat for summer? No worries, these bars can be made in about thirty minutes from start to finish.

Supplies we used
- Kitchenaid stand mixer – it’s really nice to have an electric mixer for this recipe (an electric hand mixer is fine, too) though you can totally mix it up by hand using a large bowl and spoon.
- Measuring cups and spoons
- 9×13 baking dish – for this recipe I like to use my Nordicware 9×13 inch pan (it comes with a lid so it is great for storing the bars in as well!).
- A rubber spatula or two – because you can never have too many of those while baking! Lol
Ingredients

Butter – as always, I use salted butter for this recipe. If you use unsalted butter, you definitely will want to add a pinch of salt to the crust mixture.
Brown sugar – light or dark brown sugar, it doesn’t matter.
Flour – all purpose flour
Oats – preferably quick oats
Baking soda
Marshmallows – the miniature marshmallows
Chocolate chips – I like to use semi-sweet chocolate chips for this recipe though you can use your favorite kind! Whether it’s milk chocolate chips, dark chocolate chips or something like those gourmet chocolate chunks, any of those are just fine.

How to make S’mores Bars
Preheat the oven to 350 degrees and grease your baking dish.
In the bowl of a stand mixer, cream the softened butter and sugar together.
Add the flour, oats, and baking soda and mix thoroughly. (The batter should be somewhat crumbly!)
Set aside a half cup of the mixture and use your hands to press the rest into the prepared pan.
Sprinkle the mini marshmallows, chocolate chips, and the reserved crust crumbs over top of the pressed crust and bake for 15 – 20 minutes, until the marshmallows are toasted golden brown. They might seem too goo-ey and underdone at the 15 minute mark, but they will turn more solid as they cool!

How do I store S’mores Bars?
Store the S’mores bars in an airtight container at room temperature for up to 5 days, or you can freeze them for several months. Storage tip: if you want to layer the bars in a container, put a piece of wax or parchment paper between each layer so they don’t try to stick together!
Notes
Be careful not to overbake! The chewy texture is one of my favorite things about these bars and over-baking turns these bars crispy pretty quickly.

S'mores Bars
Chewy, gooey delicious chocolate marshmallow bars taste just like a s'more! (Especially when they're still warm from the oven!)
Ingredients
- 3/4 cup (1 1/2 sticks) salted butter, softened
- 1 cup brown sugar
- 1 1/2 cups flour
- 1 1/2 cups quick oats
- 1/2 tsp. baking soda
- 4 cups mini marshmallows
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350 ° F.

- Add the flour, oats, and baking soda and mix thoroughly. (The batter should be somewhat crumbly!)
