Easy Chocolate Peanut Butter Oatmeal Bars are amazing, chewy oatmeal bars with chocolate and peanut butter swirled on top. Look out, you can’t eat just one!

Looking for a different homemade sweet treat idea? You’re in the right place.
These are some of my favorite bars of all time. (Another of my favorites is Chocolate Swiss Roll Bars.) Do they look pretty? No, not really. Then why are they a favorite?
- It’s one of the easiest recipes to make. Which is always a win for me; I don’t do well with hard recipes with a lot of tedious steps that take a long time.
- No odd ingredients. The chocolate peanut butter oatmeal bars recipe only calls for common and mostly wholesome ingredients. No weird stuff; I mostly keep all these things on hand all the time. (Make them even more healthy by milling your own flour!)
- No special equipment needed! You really don’t even need an electric mixer to make these.
- They taste amazing! In my opinion, these are still some of the best tasting bars ever, despite their somewhat homely appearance.
And that is why I love Chocolate Peanut butter Oatmeal Bars. They’re a comforting and delicious treat, a great little snack, perfect for the chocolate and peanut butter lover, any time of the year.

Supplies we used
- 10×15 pan – a large sheet pan with small sides
- Electric stand mixer – we like our Kitchenaid and use it almost every day!
- Pyrex measuring cup – or a microwave safe dish of some sort to melt butter in (you could also melt it in a saucepan on the stove top)
- Measuring cups and spoons
- A spatula or two
- Grain mill – we like to mill our own flour with our Nutrimill, but that’s completely optional!

Simple Ingredients
Oats – preferably quick oats for best results. Oatmeal is the main ingredient, so using old fashioned oats, rolled oats or steel cut oats makes a more crumbly bottom layer.
Flour – we use fresh milled whole wheat flour, but all purpose works just fine
Brown sugar – light or dark brown sugar
Salt
Baking soda
Butter – salted butter
Maple syrup – real pure maple syrup, (pancake syrup or corn syrup works too)
Vanilla extract
Peanut butter – we like to use creamy peanut butter
Chocolate chips – semi-sweet chocolate chips

How to make Chocolate Peanut Butter Bars
First of all, preheat the oven to 350 degrees.
Place all the ingredients for the oatmeal layer in the bowl of a stand mixer and mix thoroughly.
Pro tip:
You’ll be unwrapping three whole sticks of butter for the crust (I know, it’s a lot!). Instead of trashing the butter wrappers immediately, use them to grease the baking pan! No non-stick cooking spray needed.
Grease a 10×15 (or jellyroll) pan and press the oatmeal mixture into the greased pan with your hands.

Bake the oatmeal layer at 350 degrees for 20 minutes. (Don’t overbake!)
Sprinkle the chocolate chips evenly and dollop the peanut butter on the freshly baked crust as soon as it comes out of the oven.

Wait a few minutes, then spread the half melted chocolate and peanut butter as evenly as you can with a spatula. (We like to leave some peanut butter streaks instead of spreading until it’s completely melted and mixed together!)

Allow the bars to cool for about an hour or more (or you can totally eat one sooner than an hour!) before serving. They’re rather messy if you try serving them before the peanut butter and chocolate layer has hardened at least somewhat.

How to store Chocolate Peanut Butter Oatmeal Bars
Store the chocolate peanut butter bars in an airtight container at room temperature for 5-7 days.
You can also freeze them for up to three months (or even longer, though they are subject to tasting freezer-ish at that point! Don’t ask me how I know).
Notes
A 10×15 pan of bars is alot of bars! (Especially for two people, like in our case) No worries, you can cut the recipe in half and make it in a 9×13 pan instead. Or make the full recipe, but put the bars in two separate 9×13 pans and freeze one for later!
