Crispy Oven Baked Chicken is simply butterflied chicken breasts dredged in butter and a basic breading, then baked to perfection. This simple recipe is one of those trusty go-to recipes when in need of a quick and easy dinner solution!

Delicious comfort food at it’s finest for the whole family to enjoy.
The breading is what makes this recipe unique; combine the main ingredient (Rice Krispies cereal!) with a few key seasonings you most likely already have in your pantry and just like that, you’ve got a tasty breading.
And lots of butter keeps the chicken from drying out while it bakes.
It’s so simple!
Perfect for beginner cooks in the kitchen.
Or folks like myself who tend to wait until the last minute to decide what’s for dinner tonight.
At any rate, this just might be one of my new favorite chicken recipes.

What is comfort food?
The dictionary definition of comfort food is “food prepared in a traditional style having a usually nostalgic or sentimental appeal.”
I would say the Mennonite cuisine consists of mostly comfort foods. Meat, potatoes, and a vegetable is a standard outline for meals in the Mennonite culture, I’d say. When meal planning, I’ll usually start with selecting the main meat dish based off of what I have in the freezer. (We buy the majority of our meat in bulk then have it processed at the local butchershop.)
Then I’ll decide whether I want to make some sort of potato or rice dish to compliment my meat; lastly I’ll either make green beans, corn, or maybe peas, all of which have usually been preserved from the garden.
And there’s my meal!
Oh, there are many more traditional things I could add to my meal. Bread or dinner rolls, side salads or cheese blocks, pickles or olives, or even desserts such as Eclair Dessert or Chocolate Cream Cheese Cupcakes.
And hey! I’ve not even mentioned all those great recipes for homey, comforting casseroles and soups such as Cheeseburger Soup or Pizza Casserole, which can be made for a tasty meal in and of themselves!
So as I was saying, Mennonite food = comfort food.
Just like this oven-fried chicken recipe!
Simple ingredients, and a very easy meal idea to add to your dinner rotation.
What should I serve with Crispy Oven Baked Chicken?
Broccoli. Simple steamed broccoli is what I made as a side for today’s chicken dinner; it’s one of my favorite side dishes! Roasted broccoli would also work well, since you’ll already be using the oven to bake the chicken.
Salad. A simple side salad would make a splendid side!
Potatoes and a vegetable. Take it a step further and make a full course traditional meal with creamy mashed potatoes and gravy or Oven Roasted Parmesan Potatoes and a vegetable such as green beans or broccoli.

Ingredients
Boneless skinless chicken breasts
Butter – salted butter is a key ingredient; it’s the secret to keeping the chicken from drying out while baking.
Crisp rice cereal – here’s where some unique flavor comes in; we used Rice Krispies cereal.
Flour – any flour, we used all-purpose
Salt – we used ordinary iodized table salt
Black pepper – freshly ground black pepper is best!
Garlic Powder
Paprika

- Cutting board
- Rada knife
- Pyrex glass dishes
- Nordicware baking sheet pan
- Measuring cups and spoons
- Instant-read thermometer
How to make our Crispy Oven Baked Chicken – Simple & Easy Recipe
First, preheat the oven to 400 degrees. Line your baking pan or dish with aluminum foil and grease with either non-stick cooking spray (the easiest way), butter, or olive oil.
Secondly, trim off any chicken fat you don’t wish to eat on the chicken breasts. Slice the 2 chicken breasts in half horizontally, butterflying them to make a total of 4 chicken pieces. (Click here if you have questions about how to do this). Pat the 4 chicken cutlets dry with paper towels.

Melt the butter in a shallow microwave safe dish in the microwave or in a saucepan. (I like to save on dishes and use the same dish to melt the butter that I’m planning to use for dipping the chicken, and for best results I like to use these!)
Crush the Rice Krispies by dumping them in a ziploc bag and sealing it shut; then either roll them with a rolling pin or use your hands to crush them. This is currently the best way we’ve found to achieve finely crushed Rice Krisipies in a hurry. Of course, you could also use a food processor.
Combine the crushed Rice Krispies, flour, salt, paprika, pepper, and garlic powder together in another shallow dish and mix thoroughly, creating the breading. (Here again, I like to use the same dish for mixing that I’m planning to use in the breading process.)

Dip each chicken cutlet in the melted butter first (the sides of the chicken cutlets, too!), then coat in the breading mixture, and finally place in a single layer on the prepared baking pan.

Drizzle any leftover melted butter on top of the breaded chicken cutlets.

Bake, uncovered, at 400 degrees for 20 minutes or until a meat thermometer inserted in the fattest part of the chicken reaches an internal temperature of 165 degrees. The chicken should be crispy and golden brown.

Allow the baked chicken to rest for 5-10 minutes, to ensure you’ll have juicy meat. (Click here to learn more about the different methods of cooking juicy chicken!)

Notes
Leftover chicken can be stored in a sealed container in the refrigerator for 3-4 days.
You can use 4 boneless skinless chicken thighs instead of 2 breasts.
Bone-in chicken works as well, though the baking time is definitely longer.

- 4 tbsp. flour
- 1 tsp. salt
- 1 tsp. paprika
- 1/4 tsp. pepper
- 1/2 tsp. garlic powder
