Our Simple Taco Soup Recipe contains all the lovely flavors of tacos in one amazing soup. You’ll only need one soup pot and some basic ingredients to whip up a tasty supper of taco soup for your whole family to enjoy.

Soup season is here, officially. There’s a chill in the air, the trees are turning glorious shades of gold, red, and rust. Flocks of Canada geese fly overhead in a classic v-shape winging their way to the sunny south and the sky is oh, so blue. Inside the cozy kitchen, I dust off my trusty soup pot in preparation of making one of my favorite meals ever.
What could be better for dinner on a chilly fall day than a large pot of comforting, cozy soup?
Cheesy chicken chowder, cheeseburger soup, chicken chili, chicken corn noodle soup…we love them all. Especially in the fall and winter months.
One of my favorite things about this great recipe is how much it makes; there’s plenty for leftovers to reheat for lunch the next day!
This easy recipe for a convenient one pot dinner is a family favorite. We hope you’ll love it as much as we do.

Ingredients

Ground beef – we get our ground beef in bulk from the local butcher most times.
Onion – white or yellow onion diced into tiny pieces
Garlic – a clove of garlic, minced finely (or from the jar which is what we used today!)
Tomato juice – we can our own tomato juice every summer but it’s also available at the grocery store
Corn – here again, we use our own preserved corn from our garden, but a can of corn from the store works great as well. Just be sure to drain and rinse it!
Black beans – a can of black beans, drained and rinsed also
Taco seasoning – one of those store-bought packets or you can make homemade taco seasoning
Salt – your favorite kind of salt
Pepper – ground black pepper

Toppings
The ultimate three toppings (and our most favorite toppings) are crushed tortilla chips, sour cream and shredded cheddar cheese. However, go ahead and add all your favorite taco toppings! Here are a few ideas:
- Avocado chunks
- Sliced green onion
- Crushed Doritos chips
- Fresh cilantro and/or parsley
- Lime wedges (to squeeze over the top)

Simple Taco Soup Recipe Instructions
Dice the onion, and mince the garlic. Totally optional, but you can heat a drizzle of olive oil in the soup pot first before adding the beef, onion, and garlic. Then place the thawed ground beef, diced onion and minced garlic in a large soup pot and cook, stirring occasionally, until the meat is fully cooked and browned to your liking.

Add the remaining ingredients: tomato juice, drained black beans, corn, taco seasoning, salt and pepper into the soup pot with the cooked ground beef mixture and stir thoroughly. (No, we don’t drain off the excess fat from the beef in this recipe!) Simmer on low to medium heat for 15-30 minutes.

To serve, garnish each soup bowl with crushed tortilla chips, a generous dollop of sour cream and shredded cheese.

Storing the leftovers
Store the leftover taco soup in an airtight container in the fridge for 3-5 days.
You can also freeze it for several months. It’s handy to freeze the leftover taco soup in meal size portions (like in a gallon freezer bag). To reheat, thaw the soup first then heat until piping hot in the microwave or a crockpot or a pot on the stove.
Customize your Simple Taco Soup Recipe with these add-ins
This recipe is great just the way it is. Just for fun, here are a couple things people sometimes add to their taco soup:
- A can of diced tomatoes
- Diced peppers – it can be a bell pepper or jalapeño peppers
- Add an extra can of beans – a can of drained and rinsed great northern beans, kidney beans, pinto beans or chili beans in addition to or instead of black beans
- Spices or seasonings – chili powder, cayenne pepper, seasoned salt
- A can of Ro-tel diced tomatoes and green chilies
- Substitute the ground beef with another ground meat like ground turkey or ground pork
- Substitute corn chips for crushed tortilla chips

- 2 cups (1 can) corn
- 1 package (3 tbsp.) taco seasoning
- 1/2 tsp. salt
- 1/2 tsp. pepper
Toppings
- Crushed tortilla chips
- Sour cream
- Shredded cheese
Instructions
