Corn Chip Lettuce Salad is a classic tossed lettuce salad with a few unique ingredients and a special homemade salad dressing! It’s a favorite in the Mennonite culture.

Simple Unique Lettuce Salad (With Fritos Honey BBQ Twists!)
Yay, I’m excited to share this one! This salad is always a big hit; if I take a big dish of corn chip salad to a potluck, there’s a good chance the dish will get scraped clean!
Warm weather is surely on the way (even though we can’t tell it at times!), and I’m thinking summer cookouts, bbq chicken, campfires, all the things. Corn chip lettuce salad would make a perfect side dish to go with a variety of grilled meats!
What is Corn Chip Lettuce Salad?
No, it’s not a taco salad, Mexican street corn salad, avocado salad, or anything quite like that.
Corn Chip Lettuce salad contains lettuce (of course!), bacon, hard-boiled eggs, cheese and Fritos twists, then it gets tossed in a signature homemade salad dressing. And one of my most favorite things about this salad would have to be the crunchy Fritos twists!
It may sound disgusting, but this corn chip lettuce salad, along with Broccoli Cauliflower Salad, is one of my favorite salad recipes and today I’m sharing the recipe with you!

Supplies we used
- Cutting board and kitchen knife – to chop the lettuce and other ingredients
- Large bowl – you’re going to want a place to mix everything together.
- A spatula or two
- Measuring cups and spoons
- Blender – is great to have for blending the salad dressing. You can whisk it together by hand in a small bowl too, but it might have a more gritty texture then, from the sugar.
- Egg cooker – love, love, love my egg cooker. It makes hard-boiling eggs super easy!
- Microwave bacon tray – quickly fry the bacon in the microwave, without making a greasy mess.
- Grater – I always like to shred my own cheese rather than buying pre-shredded from the store.
Ingredients

Lettuce – iceberg, spring mix, romaine lettuce, or a mixture of lettuce is great. Today I used only iceberg lettuce and I believe that’s traditionally how it’s made!
Bacon – fried and crumbled bacon or bacon bits from the store
Hard-boiled eggs
Shredded cheese – cheddar cheese is probably my fave but you can use any shredded cheese.
Corn chips – or more specifically Fritos Honey BBQ twists. It’s also totally fine to use plain Fritos corn chips! You can crush the crunchy corn chips a little bit before mixing, or let them whole.
For the creamy dressing:

Mayonnaise – preferably real mayonnaise; Miracle Whip adds a different flavor that we don’t care for!
Vinegar – white distilled vinegar; here again, not saying you can’t use apple cider vinegar or a different kind, but it will change the flavor!
Milk
Brown sugar & white sugar

How to make Corn Chip Lettuce Salad
First step: prep the ingredients. Hard-boil the eggs, then dice them into little chunks. Fry the bacon, and crumble it into bits. Chop the lettuce into bite-size pieces. Shred the cheese. Then toss everything into a large mixing bowl.

Second step: make the dressing. Dump all the dressing ingredients into a blender and blend until nice and smooth.
Third step: Add the dressing and the corn chips to the mixing bowl with the rest of the ingredients and toss thoroughly. Serve immediately.

How do I store Corn Chip Lettuce Salad?
The only thing that’s not to love about this salad is that so soon, the lettuce starts to wilt, and the corn chips get soggy. I wouldn’t recommend keeping any leftovers, since I feel like soggy fritos twists and lettuce are nobody’s favorite.
Tips, Tricks + Notes
If you want to make this salad ahead of time, don’t add the cheese, corn chips and dressing until last minute, just before serving! This salad is only good for an hour or two after everything is mixed together!
If I want to make this for my little family, i will just serve the corn chips, cheese, and salad dressing separately! Everyone can add their own, and nothing needs to go to waste. Keep in mind, it might take more salad dressing if you do it this way.
As always, you can tailor this recipe to suit our family’s preferences. There are lots of options when it comes to salad toppings; add any more toppings you wish like bell peppers, black olives, tomatoes, etc.

Ingredients
- 8-10 cups chopped lettuce
- 1 pound (about 15 slices) bacon
- 6 hard boiled eggs
- 1 cup shredded cheese
- 4 cups Fritos honey BBQ corn chips
Classic Corn Chip Salad Dressing
- 1 cup mayonnaise
- 2 tbsp. vinegar
- 1/4 cup milk
- 1/4 cup brown sugar
- 1/4 cup white sugar
