These homemade Cheddar Cheese Crackers are kind of like homemade Cheez-its made with fresh milled flour! And none of the junk. These are one of my favorite homemade crispy, salty snacks to munch on.

Homemade Whole Wheat Cheddar Cheese Crackers Recipe
Ok, I'm here with a homemade Cheez-it recipe! I did not know whether this day would ever come, as many sub-par batches of crackers as I made (and ultimately trashed) because they just weren't good.😅
But I was again inspired to give it a try when I saw Hannah | a Feral Housewife share about it on Substack! Homemade crackers are easy to make, it just takes a bit of time. So they better taste good at the end, ya know?
And those flaky salt chunks on top? Necessary. They are so good! Like Hannah mentioned, and I've found this to be true too; if you want your homemade snacks to taste more like the bought version, you'll likely need to add a lot more salt than you'd think, to get it to taste right.

Supplies You'll Need (and what we used)

- Food processor - this Cuisinart 8-cup food processor was a wedding gift, and I have used it a lot!
- Rolling pin - to roll out the dough
- Pizza cutter - to cut the crackers. A cookie cutter works too!
- Thin metal spatula - something to transfer the crackers to the baking pan. A pastry cutter works well too!
- Toothpick or chopstick - to poke holes in the crackers
- Sheet pan - for baking

All About the Ingredients
- Wheat berries - any type of wheat should work here. Hard white, hard red, soft white… I used hard white wheat, like usual:)
- Butter - salted butter
- Oil - olive or avocado
- Salt - I like Diamond Crystal Kosher salt
- Shredded cheese - and like always, I recommend shredding your own instead of buying pre-shredded cheese from the store
- Milk
- Flaky salt - for sprinkling on top! Don't skip this:)
- Extra flour, for dusting

How to make Cheddar Cheese Crackers
Preheat the oven to 400 degrees F.
Mill the wheat into flour.
Then put the flour, butter, oil, salt, garlic powder and onion powder into the food processor and pulse until the mixture looks like sand.
Add the cheese and pulse again.
While the mixture is processing on low speed, pour the milk into the top. Keep processing until the mixture turns into a ball. Take your hands and press any remaining crumbs into one ball of dough.

Lightly dust your work surface with flour. Roll out the dough with a rolling pin, as thin as you can! Dust on more flour as needed to keep the dough from sticking.

Cut into little squares with a pizza cutter.

Transfer to a greased sheet pan and poke each one with a chopstick or toothpick. Sprinkle the crackers with flaky salt.
Bake for 12-15 minutes or until the crackers are toasty and golden brown. I like to err on the side of over-done rather than under-done!

Let the crackers cool completely.
Enjoy!

How to store homemade cheddar cheese crackers
Place the crackers in an airtight container or Ziploc bag and store at room temperature for a week or two.
Tips, Tricks and Notes
You will need a food scale for this recipe, since measuring fresh milled flour with a measuring cup is hard to consistently measure correctly. It's so fluffy!
You can roll the dough out on a piece of parchment paper! Then transfer the whole works to a baking sheet and bake just like that.

- ½ tsp. paprika
- ¼ tsp. garlic powder
- ¼ tsp. onion powder
- 2 cups shredded cheddar cheese
- ½ cup milk
- Flaky salt
- Extra flour, for dusting
