Homemade Healthy(ish) Graham Crackers
Umm, there is actually a bit of sugar in these so they're not completely healthy. But still, better that the store-bought ones I suppose.
If you've been around for a while, you likely know that I enjoy DIY recipes, so naturally when Erin Whalen shared a graham cracker recipe in an email, I was inspired! Her recipe included sourdough though, and I don't do sourdough, so I came up with this recipe.
And I was impressed! I have made quite a few flops when it comes to crackers, so I had low expectations with graham crackers, too. But no! These taste good (very important) and they actually bake nice and crispy (also very important). And also, do not skip the cinnamon sugar sprinkle before baking. It really makes them seem like authentic graham crackers!
Now. I'm ready to whip up a batch of homemade marshmallows so we can have s'mores this weekend, hopefully.😎

Supplies You'll Need (and what we used)
- Measuring cups and spoons
- Kitchenaid mixer - an electric stand mixer of some kind

- Rolling pin - to roll out the dough
- Pizza cutter - to cut the crackers. A cookie cutter works too!
- Thin metal spatula - something to transfer the crackers to the baking pan
- Toothpick or fork - to poke holes in the crackers
- Small mixing bowl - for the cinnamon sugar mixture

All About the Ingredients
Wheat berries - any type of wheat should work here. Hard white, hard red, soft white… I used hard white, like usual:)
Butter - I am that crazy person who always just uses salted butter, no matter what
Brown sugar - your choice of brown sugar
Honey
Baking soda
Salt
Cinnamon - this is optional. I like cinnamon, so I'm definitely not skipping it:)
Water
Vanilla extract
More cinnamon and coarse sugar (I used cane sugar here) for sprinkling on top

How to make Easy Homemade Graham Crackers
First, mill the flour on the finest setting.

Meanwhile, put the softened butter and sugar in the bowl of the stand mixer and beat together for several minutes.
Then add the rest of the ingredients - flour, water, honey, baking soda, salt, cinnamon and vanilla - and stir until thoroughly combined.
Cover the bowl and let the dough chill in the refrigerator for 30 minutes or so.
Preheat the oven to 350° F.
Lightly dust your work surface with flour. Use a rolling pin to roll out the dough (give it a light coating of flour so it doesn't stick) as thin as you can! The thinner the better, since they'll puff up in the oven somewhat.

Cut into squares with a pizza cutter.

Then transfer to a greased sheet pan with a thin metal spatula. (Collect any ragged edge pieces and scraps and re-roll them out flat and cut more crackers until all the dough is used!) Poke holes in the top with a toothpick or fork to give them that traditional graham cracker look.

Mix the cinnamon and coarse sugar together, then sprinkle on top of the crackers.

Bake for 15-20 minutes. Thinner crackers will likely be crispy and golden brown by 15 minutes. Thicker crackers will likely need more like 20 minutes until they're crispy golden brown. For crackers, I like to err on the side of over-done rather than under-done!

Let the crackers cool completely. (I just let them right on the sheet pan to cool)

How to store homemade graham crackers
Store the graham crackers in an airtight container or Ziploc bag at room temperature for a week or two. You can also freeze these for several months!
Tips, Tricks and Notes
You will need a food scale for this recipe, since measuring fresh milled flour with a measuring cup is hard to consistently measure correctly. It's so fluffy!
You can roll the dough out on a piece of parchment paper! Then transfer the whole works to a baking sheet and bake just like that.
