Easy Spinach Strawberry Feta Salad Recipe
Hey there, today I have another favorite salad of ours - spinach strawberry salad! And this one comes straight from my mother-in-law. We often have this salad when we eat a meal at their place and it's SO good!
This salad may be a little out of the comfort zone for some folks. Spinach and feta cheese are not in the typical Mennonite comfort food category. (Which is normally what I share - Mennonite comfort food!) But, if you're someone who likes salad and trying different salad recipes, I think you are going to love it!
This strawberry spinach salad is the perfect thing to make with fresh strawberries and spinach when they're in season in the spring.
A few of my favorite things about this spinach strawberry feta salad is that it's super easy to prepare, it's a fun and pretty salad to serve with dinner, and of course the flavors! So delicious.
Supplies You'll Need (and what we used)
- Cutting board and kitchen knife
- measuring cups and spoons
- Blender - or a mixing bowl and whisk to stir the dressing together. Our Magic Bullet blender works well for this!
- Serving bowl

Ingredients
- Spinach - the baby spinach is my favorite
- Feta crumbles
- Nuts - pecans are my favorite, but I'm actually using a mix of walnuts and pecans today
- Strawberries
- Red onion - any onion will work, but the red onion adds some color and the flavor is good in this salad, too!
for the dressing:
- Mayonnaise - don't substitute with Miracle Whip, it needs to be real mayo!
- Milk - I use whole milk
- Sugar - I use cane sugar
- Apple cider vinegar
- Oil - avocado oil, preferably. Olive oil has a stronger flavor! (which is fine if you like that, but we prefer avocado oil.)
- Poppy seeds
- Salt

How to make Strawberry Spinach Feta Salad
Wash the strawberries and spinach (if necessary).
Chop the stems off the spinach, remove the strawberry tops and slice the strawberries, and chop the red onion. If the nuts are large, give them a little chop. Place all the salad ingredients in a large bowl.

Mix the salad dressing ingredients together, using a blender or a mixing bowl and whisk. Pour into a condiment bottle or jar and refrigerate until ready to serve.

Either toss the salad with the dressing, or serve separately and everyone can add their own (my personal preference). Serve and enjoy!

How to Store Leftover Strawberry Spinach Feta Salad
Put the salad in an airtight container in the refrigerator for 1-2 days. Assembled spinach salad is best eaten right away! I like to keep the ingredients in separate containers so it's easy to assemble a smaller salad, the perfect size for our family.
Tips, Tricks and Notes
Instead of mixing everything together, I like to store the salad ingredients in separate containers! Then I can easily assemble a smaller salad for our family.

Strawberry Spinach Feta Salad Recipe Variations
Spinach - you can use leafy spring greens, kale, arugula or a combination of greens
Feta - if you're not a feta cheese fan, you can use shredded mozzarella, blue cheese crumbles or even Parmesan.
Strawberries - can be swapped with blueberries
Red onion - any onion will work!
Pecans - you can use slivered almonds, walnuts, cashews, or sunflower seeds instead.
Make it a full meal by adding a protein! Grilled or cooked chicken or shrimp would go well with this salad.

- ⅔ cup mayonnaise
- ½ cup milk
- 6 tbsp. sugar
- 2 tbsp. apple cider vinegar
- 1 tbsp. avocado oil
- 1 tbsp. poppy seeds
- a pinch of salt
