Easy Loaded Potato Soup tastes like a loaded baked potato, but it's a soup! It's simple and easy to make and tastes amazing on a chilly fall or winter day. (And to be honest, I make soup in the spring and summer sometimes, too!) Loaded potato soup is just a good, simple comfort food.

Homemade Loaded Baked Potato Soup
We're all about comfort food here at Small Town Scratch, so yes, there are some more soup recipes in the pipeline! Today I'm sharing another favorite - Loaded Potato Soup!
Think loaded baked potato, except it's soup.
My mom used to make an old fashioned potato soup sometimes that was a thin broth with potato chunks, hard boiled egg pieces, and I'm not quite sure what else was in there, exactly. This soup is not like that. This soup is thick and creamy, loaded with potatoes and bacon bits and the toppings are not optional! Gotta have a large dollop of sour cream, a generous pinch of shredded cheese and some green onions. Yum!:)
Supplies You'll Need (and what we used)
- Soup pot - this recipe doesn't make a super large batch, so a 2 quart saucepan works well.
- Cutting board and kitchen knife - to chop the potatoes and green onions
- Measuring cups and spoons
- Shaker bottle - to mix the milk and flour
- Grater - to shred the cheese (for topping the soup!)

Ingredients (and Substitutions)
- Broth - I use my homemade chicken broth, but you can use beef or vegetable broth (or even just water) instead!
- Potatoes - any kind of potatoes
- Bacon bits - I normally cook and chop my own bacon for bacon bits
- Onion powder - or an actual onion, chopped finely
- Garlic powder - or real minced garlic, if you'd rather
- Milk & flour - mixed together, adds creaminess and also thickens the soup!
- Salt & pepper
- Toppings - sour cream, chopped green onions and shredded cheddar cheese

How to make Loaded Potato Soup
Peel and dice the potatoes.

In a large pot, bring the chicken broth to a boil. Add the potatoes, onion powder, garlic powder, salt and pepper and cook for 15-20 minutes, until the potatoes are soft.

While the potatoes are simmering, cook the bacon (unless you're using bacon bits from the store).

Once the potatoes are soft, shake the milk and flour together in a shaker bottle then pour into the soup. Stir frequently and heat until the soup thickens somewhat. Stir in the bacon bits.

Chop the green onions and shred the cheese.
Serve the soup with sour cream, shredded cheese and sliced green onions. Enjoy!

How long is Loaded Potato Soup good for in the fridge?
Store the soup in an airtight container in the refrigerator for up to 5 days.
How to Reheat Soup
When you're ready to eat the leftover soup, put it back in the soup pot and heat on medium heat, stirring frequently, until the soup is nice and hot!
Does Loaded Potato Soup freeze well?
No, it contains dairy so I would not recommend freezing it. You totally can freeze this soup, but the texture may be a little different when you thaw and re-heat it!
Tips, Tricks and Notes
You can up the protein in this soup by adding cooked ground meat (beef, pork, sausage, etc.)
What goes with Loaded Potato Soup?
Bread (like garlic knots, dinner rolls, etc.) or a lettuce salad are great sides to serve with soup.
Or, you can serve the soup as a side along with steak or another meat entree.
Is Loaded Potato Soup gluten free?
This recipe contains flour, so no, it is not gluten free.
Is Loaded Potato Soup good for upset stomach?
No, I would not eat Loaded Potato Soup while sick, since it contains milk. Chicken Corn Noodle Soup is a good one for sick days!

- Sliced green onions
