It's sweet corn season! It's super simple to blanch and freeze your sweet corn harvest so you can eat it all year long! Here's the simple method we use to preserve sweet corn in the freezer:

Picking & husking.

After the corn is picked, remove all the husks. This is called "husking" or "shucking".

Rinse the corn.

I like to rinse the green corn cobs under running water and scrub and pick off any silks!

Cook 5-10 ears of sweet corn in a pot of boiling water for 4 minutes until the corn turns bright yellow. (This is called blanching!)

03  Blanch the corn.

Transfer the blanched cobs to an ice water bath to stop the cooking immediately, locking in that bright yellow color!

04  Ice bath the corn.

Take a sharp knife and cut off the corn kernels into a bowl.

05 Cut off the corn.

06 Package and freeze.

Scoop the corn into bags, label the bags of corn if you wish and stick them in the freezer for the coming months!
