Chewy chocolate cookies with vanilla chips are a fun and delicious twist to the classic chocolate chip cookie we all know and love!

Who doesn’t love a good chewy classic chocolate chip cookie? We reversed that and made a chocolate cookie with vanilla chips which has an almost brownie-like texture that we find very delightful and hope you will too! All you need is 30 minutes of time and some basic pantry staple ingredients to create these tasty vanilla chip cookies.
There’s a lot going on. Not only are we in the midst of a busy season but there’s also uncertainty all around. We don’t know what the future holds and that’s ok. In this season and really in all seasons of life it’s very grounding and wholesome to take care of all the little things that homemaking involves.
One very essential part of homemaking is obviously cooking and since we all have to eat we might as well enjoy the process of making and preparing food, right? So we’ve got a sweet treat for you all today!

Supplies You May Need
- Electric stand mixer
- Measuring spoons
- Spatula
- Cookie scoop
- Baking sheet
- Wire cooling rack
Ingredients
Butter: softened.
Brown sugar: did you know you can make your own homemade brown sugar?
Egg
Vanilla
Flour: regular all-purpose.
Cocoa
Baking Soda
Vanilla Chips: your choice of brand, we used Hershey’s.
How to make Vanilla Chip Cookies
Preheat oven to 350 degrees.
Using your stand mixer fitted with the paddle attachment, cream the softened butter and the brown sugar together for 2 to 3 minutes.
Add the egg and the vanilla and mix well until fully incorporated.
Next add the flour, cocoa, and baking soda and mix well again.
Finally, slowly mix in the final ingredient: the vanilla chips.

Grease the baking sheets you plan to use and using a cookie scoop (or spoon!) shape the cookie dough into 15 round balls. Place them on the cookie sheets leaving at least an inch between each one.

Bake at 350 degrees for 12 minutes. You don’t want to overbake these!
Cool on the pan for 5 minutes then transfer to wire cooling racks to cool completely! Enjoy:)

Store in an airtight container for 4 to 5 days or freeze.
Tips and Variations
As in most of our baking, we use salted butter; however, if you wish to use unsalted butter we’d recommend adding a pinch or half a teaspoon of salt to the recipe.
If peanut butter and chocolate together is your thing you can use peanut butter chips instead of vanilla. Or chocolate or butterscotch, whichever you prefer!

Vanilla Chip Cookies
Chewy Vanilla Chip Cookies are simply a delightful twist on the classic chocolate chip cookie we all know and love!
Ingredients
- 1/2 cup butter, softened
- 3/4 cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 cup flour
- 1/3 cup cocoa
- 1/2 tsp. baking soda
- 1 cup vanilla chips
Instructions
- Preheat oven to 350 degrees.
- Cream the softened butter and brown sugar for 2 to 3 minutes.
- Scrape down the sides of the bowl and add the egg and the vanilla and mix well.
- Add the flour and cocoa and baking soda and mix well again.
- Finally, slowly stir in the vanilla chips.
- Using a cookie scoop or spoon shape dough into 15 balls.
- Bake for 12 minutes. You don't want to overbake these!
- Cool on the pan for 5 minutes then transfer to wire cooling racks to cool completely.
- Enjoy!
